Black Widow Deviled Eggs

Spider deviled eggs with cheddar, bacon and olive spiders

Eight legs. One red hourglass. Zero leftovers.

57 min · 1 pan · makes 12 halves · 1 g net carbs Low-carb Halloween

Classic deviled eggs dressed up for Halloween. The filling gets shredded cheddar and crumbled bacon, and each egg gets an olive spider with a red pepper hourglass, the black widow's warning sign.

They look like a lot of work, and they aren't. The spiders are just olive halves and olive slices; once you've made two, the rest go fast.

For the spiders

Steps

  1. Put the eggs in a pot, cover them with cold water by 1 inch and bring to a boil. Turn off the heat, cover and leave them 12 minutes, then move them to ice water for 10 minutes.

  2. Peel the eggs, cut them in half lengthwise and pop the yolks into a bowl.

  4. Spoon or pipe the filling back into the whites.

  5. Cut each olive in half lengthwise. One half is a spider's body; slice the other half lengthwise into 8 thin strips for its legs.

  6. Set a body on each egg, tuck 4 legs on each side, and add two tiny triangles of red pepper, point to point, for the hourglass.

Before you start

  • Eggs that are a week or more old peel more easily than very fresh ones.
  • A zip-top bag with one corner snipped off works as a piping bag.
  • Boil the eggs and make the filling up to a day ahead. Fill and decorate within 4 hours of serving.

Tips

  • Pat the olives dry on a paper towel so the legs stay put.
  • Set the eggs on a deviled egg tray or a bed of shredded lettuce so they don't slide on the way to the party.

Swaps that work

  • Skip the bacon for a vegetarian version.
  • Use plain Greek yogurt for half the mayo for a lighter filling.
  • For a classic filling, leave out the cheddar and bacon and add 1 tsp yellow mustard.

Leftovers

Covered in the fridge, deviled eggs keep up to 2 days, though the olive spiders look best on the first day. Don't leave them out of the fridge for more than 2 hours.

Questions

How many should I make per guest?

Plan on 2 halves per guest at a party with other snacks. Change the guest count above the ingredients and the amounts update for you.

Can I make them the day before?

Boil the eggs and make the filling the day before, and keep them separately. Fill the eggs and add the spiders on the day.

How do I carry them to a party?

A deviled egg tray with a lid is easiest. Otherwise, line a container with shredded lettuce so they can't slide.
